Porto Calem Velhotes Fine Tawny is one of the most popular Port Wines in Portugal. It ages in oak casks for 3 to 4 years.

VINIFICATION
The fabrication process includes stopping the fermentation of the must by adding brandy (benefit or fortification), the blending of wines and the ageing. The fermentation in inox vats with pelliicles maceration and pump over to the temperature of 26* C, until reaching the desired Be', adding brandy in this phase. Obtained by the blending of wines of a variable maturation, lead by the ageing (minimum 3 years) in inox and wood.

TASTING NOTES
With a brown-tawny colour, it presents a bouquet of nuts and wood. In the mouth it is velvety, fruity and balanced. Ideal with fruits and cakes.

Serve between 15* C - 18* C.

Porto Calem Velhotes Fine White ages in oak casks and in wine vats. With a yellow-straw colour, reveals a floral aroma and a flavour of tropical fruits. It is smooth in the mouth, fruity and elegant.

The fermentation in inox vats with pelliicles maceration and pump over to the temperature of 20* C, until reaching the desired Be', adding brandy in this phase. Obtained by the blending of wines of a variable maturation, lead by the ageing (minimum 3 years) in inox and wood.

TASTING NOTES
With a yellow-straw colour, it presents a bouquet of a floral and tropical fruits. In the mouth it is smooth, fruity and elegant. Ideal with salads, fruits and cakes.

Serve between 7* - 9* C.

Calem Late Bottle Vintage 2004 ages in oak casks inox vats between 4 and 6 years. With red colour, it presents a bouquet of red ripe fruits combined touches of wood. In the mouth is velvety and fruity with a long finish. Ideal with cheeses, fruits and ice-creams.

VINIFICATION
The fabrication process includes stopping the fermentation of the must by adding brandy (benefit or fortification), the blending of the wines and the ageing. The fermentation in inox vats with pellicles maceration pump over to the temperature of 29* C - 30* C, until reaching the desired Be', adding brandy in this phase. These high quality wines are obtaines from a single harvest. Bottled between the fourth and sixth year after the harvest.

TASTING NOTES
Ruby coloured Port with ripe red grapes and jammy aromas. In the mouth it shows the red fruits flavours and the balance between acidity and tannins. Ideal served fruits, ice-cream and cheese.

Serve between 15* - 18* C.

Colheitas are wines from a single year and ages in oak casks for long years. Present a brown-tawny colour, and evidence a bouquet of wood and spices. In the mouth, they are smooth and balanced. Ideal with desserts.

VINIFICATION
The fabrication process includes srtopping the fermentation of the must by adding brandy (benefit or fortification), the blending of wines and the ageing. The fermentation in inox vats with pelliicles maceration and pump over to the temperature of 29* C, until reaching the desired Be', adding brandy in this phase. These high quality wines are obtained from a single harvest. It ages in wood during periods of never inferior at 7 years. It is then delicately filtered and stabilized before bottling.

TASTING NOTES
Blondish in colour with some red shades, it presents aroma of wood and ripe fruits. In the mouth it is velvety, full bodied and complex. Ideal with cakes and chocolate.

Calem's Vintage Ports are made from the best grapes grown in the upper Douro, in the heart of the world's finest demarcated wine region. After 2 years in fine oak vat, Calem's Vintage Ports are bottled in Calem's cellars in Vila Nova de Gaia, across the river from the historic city of Oporto. Improving for decades in a cool dark location. Vintage Port is a wine of one single harvest of outstanding quality. Since the characteristics may deserve the designation, the wine must be bottled between the second and the third year of age, maturing henceforth in the bottle. Vintage Ports are wines that developed very well in the bottle. Choose a dry and cool place and keep the bottles laid down. As Vintage Ports form a deposit, the bottle should be placed upright for a couple of hours, before careful decanting.

VINIFICATION
In traditional "lagares", with temperature control.

TASTING NOTES
Intense and deep color, showing blue reflexes. Very fresh aromas, basil and orange flower, red currant and blackberry. When tasting, the intensity and quality of the aroma stands out. The mouth becomes full with the wine structure; the middle of the tasting is very intense, showing ripe fruit and a smooth tasting. At the final the good tannins stand out without too much roughness and aromas prevail for ever. Ideally served at the end of a meal with strong cheeses, sweet desserts or a cigar after dinner.

The VINTAGE PORTS are matured in bottle and, with the age, get a big deposit. It is necessary to decant the wine before serving. It is advisable to put the bottle standing up, some 12 to 24 hours and follow carefully the decantation. To be served at 17* - 18* C and, as wines with aromatic complexity, they accompany very well strong cheeses good sweets or a cigar.

TASTING NOTES
A deep ruby color wine, very intense, with rich aroma of ripe red fruits. Harmonious in the mouth, and quite balanced tannins. It has a long and delicious final.
